Brown Butter Chocolate Chunk Cookies

You won’t be able to stop at one

Yields 25 cookies

Ingredients

1 cup (2 sticks) salted butter

250 g all-purpose flour

220 g brown sugar

130 g granulated sugar

2 eggs plus one yolk

1 ½ tsp baking soda

1 ½ tsp salt

1 ½ tsp vanilla extract

12 oz semi-sweet chocolate chunks

Instructions

  1. Brown 1 cup (2 sticks) of salted butter over medium-high heat. Brown until the color has changed to a golden brown and gives off a nutty aroma. Stir constantly to ensure the butter solids do not burn. Empty the browned butter into a small bowl and chill in the freezer for 15 minutes or until it is about room temperature to the touch.

  2. In a medium bowl whisk together 250 g of all-purpose flour, 1 tsp baking soda, and 1 ½ tsp salt.

  3. Add the cooled browned butter to a large bowl with 220 g brown sugar and 130 g granulated sugar and whisk until well combined, about 2 minutes.

  4. Add the 2 eggs plus 1 yolk and 1 ½ tsp vanilla to the batter and whisk vigorously until well combined and a tad fluffy.

  5. Using a spatula, gradually add your dry ingredients, folding to incorporate gently. Do not overmix, you want to stop as soon as you stop seeing flour.

  6. Add in 10 oz semi-sweet chocolate chunks and fold in gently.

  7. Create balls of dough roughly 1 inch in diameter using a medium-sized scoop or a tablespoon. 

  8. Chill for at least 30 minutes but 12 or more hours will yield the yummiest results. The longer you chill the dough, the better the cookies will turn out.

  9. Preheat the oven to 375°F and line a baking sheet with parchment paper or a silicone baking mat. 

  10. Evenly space out our balls of dough, about 6 or 8 on a pan straight from the fridge. Using the reserved 2 oz of chocolate, lightly press 2-3 chunks onto the top of each ball.

  11. Bake for 7 minutes or until slightly golden brown. Do not overcook these—they should have been browned but still chewy and doughy in the center.

  12. Allow to cool on the baking sheet for about 3 minutes and move to a cooling rack to cool completely.

  13. Garnish with a light sprinkle of flaky salt for bonus points!
