Nutty Granola Bars

Perfect quick breakfast or snack for any family.

Yields 12 bars.

Ingredients

3 cups rolled oats

¾ cup peanut butter 

⅓ cup cashews     

⅓ cup pistachios

1 tsp kosher salt

1 tsp cinnamon

¼ cup maple syrup

¼ cup honey

1 tsp vanilla extract

¼ cup peanut butter

¼ cup semi-sweet chocolate chips

Instructions

  1. Roughly chop ⅓ cup cashews and ⅓ cup pistachios. Add to a large bowl.

  2. Combine ¾ cup peanut butter, ¼ cup maple syrup, and ¼ cup honey in a microwave-safe bowl and microwave for about 30 seconds. 

  3. Add 1 tsp kosher salt, 1 tsp cinnamon, and 1 tsp vanilla to the peanut butter mixture and stir to combine. 

  4. Add 3 cups of rolled oats into the bowl with the chopped nuts with the peanut butter mixture. Stir to combine.

  5. Line a 9x13 baking sheet with parchment paper and cut corners to create even corners.

  6. Add the granola mix to the lined pan and evenly spread it across the pan. Press the granola firmly into all four corners and press the granola firmly with your palms to create an even and flat layer of granola.

  7. Put about ¼ cup peanut butter in a small microwave-safe bowl and heat for about 30 seconds or until runny.

  8. Put about ¼ cup semi-sweet chocolate chips in a small microwave-safe bowl and heat in 20-second increments, stirring between each increment, until melted. Do not continue heating once the chocolate melts, as it will release too much moisture from the chocolate.

  9. Carefully drizzle the chocolate evenly over the granola, making sure to get the chocolate close to the edges and corners. Then drizzle the melted peanut butter over the chocolate evenly. 

  10. Chill the granola in the freezer for 20 minutes. 

  11. Remove the granola from the freezer and cut it into 12 equal-sized pieces.

  12. Store in the fridge for up to a week. If they last that long.
